Homemade, Comforting Maple Granola (Vegan, GF, DF)

The ideal comfort breakfast for cold, dark, wintery mornings when getting out of bed is at its hardest.

The perks of making your own granola is it’s actually soo easy and still as tasty as the store bought stuff (or even more so) minus the white sugar and other additives. Instead, using a natural sweetener, maple syrup.

Even though I reckon it’s pretty hard to get sick of this, you can easily change up the ingredients for variation by swapping seed and nut combinations as well as swapping the oats themselves for other gluten free options (check if your oats are GF, some mass produced brands still contain it) such as buckwheat or quinoa flakes.

Personally, I usually opt for gluten free options whenever I can as I really feel the difference physically.

It’s no secret that gluten is harder to digest. As humans, we aren’t build to digest gluten, and so opting for a GF granola will leave you less likely to crash or feel sluggish before you reach midday.

Makes: 500g

 

Ingredients:

  • 300g oats
  • 90g coconut oil
  • 140ml maple syrup (or substitute with agave syrup or honey)
  • zest of 1 orange & the juice of 1/2
  • 3-4 tsp cinnamon
  • 1 tsp vanilla essence
  • 60g pumpkin seeds
  • 30g lin seeds
  • 40g mixed nuts & raisins
  • 50g coconut flakes

How to:

  1. Pre-heat oven to 150°C
  2. Prepare coconut oil & maple syrup mix by heating in a glass dish in the oven or on the stove

3. In a medium sized mixing bowl – add all the other ingredients (except coconut flakes & raisins)

4. Add coconut oil & maple syrup mix when melted into mixing bowl

5. Combine and place on a baking tray lined with baking paper

6. Toast in oven for 45 mins, turning granola every 5-10 minutes

7. After 35 minutes baking time, add the coconut flakes and raisins

8. When finished baking, serve with organic yoghurt, kefir, coconut milk (or other plant based milk alternative)

9. Add toppings as desired! I added blueberries & more cinnamon (wintery; festive vibes)
