Autumn Harvest Breakfast Bars (No Bake)

As the Earth gets cooler, our bodies begin to crave more protein and fat dense foods in order to power us through the windy, rainy and frosty days that autumn brings. 🍂

As a result, our digestive fire begins to strengthen to break down these foods.

The autumn harvest cultivates lots of delicious nuts and seeds, so this is a great time of year to include lots of these ingredients in your diet.

An easy way to get in a good variation can be done right at the beginning of your day!

Say hello to these oatty, peanutty breakfast bars! 🍪

Absolutely TO DIE FOR, easy as pie to make, and contains all natural, plant-based ingredients.

It’s really great to add in Autumn spices such as cinnamon, cardamon & nutmeg.

They are so good for our health this time of year as their gentle, anti-inflammatory properties encourage our bodies to naturally detoxify after all the BBQs and ice cream of the summer season! Not just those, but also the changing outside temperature is significant to our metabolism & digestive system, so spices like these help us make the transition with more ease and less stress.

Ridiculously eat to make and you have the option of not baking if you’d prefer. Simply leave the bars to set in the fridge and serve up with a nice warm mug of hot chocolate or another hot fluid of choice. ☕️ 😁

These bars are so solid & filling, I can guarantee they’ll keep you going all morning! 📖 📝


Makes: 6-8 bars

Ingredients:

  • 6 tbsp Peanut butter
  • 3 tbsp Coconut oil
  • 4 tbsp Honey
  • 135g Oats
  • 1 tsp Autumn spice mix: ¼ cinnamon, ½ cardamon, ¼ nutmeg
  • 20g Pecans
  • 20g Pumpkin seeds
  • 20g Cranberries (Optional: 1 tbsp protein powder)(NOTE: feel free to swap out the nuts and seeds used in this recipe for different ones if you’d prefer!)

 

How to:

  1. Melt the peanut butter, coconut oil & honey in a pan over a low/medium heat.
  2. Place the warm liquidy mixture into a mixing bowl and add the oats, pecans, pumpkin seeds & cranberries and combine.
  3. Line a glass dish/casserole dish with tin foil & evenly spread out the mixture across.
  4. Leave to set in the fridge for at least 2 hours (or overnight is best!). If you’re really frothing at the mouth at this point, you can also bop them in the freezer for 15-20 minutes.
