Vegan Tahini Blondies

Don’t even think twice , just make these..

I had no idea what these were going to taste like and I was completely blown away.. 😱

These chickpea-based treats are oozing flavour and contain all-natural ingredients.

Soft and gooey in the centre, you don’t have to worry about missing out on the satisfaction factor like their more processed counterparts. 😋

For me, knowing that these blondies are made from whole food ingredients makes them 100x more enjoyable.

Above all, my aim is always to provide recipes for healthy alternatives that aren’t a faff and a half to make!  Simply combine all the ingredients in a food processor then spread out on a baking tray and pop in the oven.  You’ll be drowning in their deliciousness within an hour from start to finish. 😸

Makes: 10-12 servings

Ingredients:

  • 400g can of drained chickpeas (if using dried chickpeas, soak overnight)
  • 1/4 cup nut butter (I used crunchy peanut for an extra crispiness)
  • 1 cup soft dates, pitted (leave to soften in boiling water for 30 minutes prior)
  • 1/4 cup tahini
  • 3 tbsp plant-based milk (I used almond milk to add to the nuttiness)
  • 2 tsp vanilla extract
  • 1 tbsp maple syrup/honey
  • 30g dark chocolate chips
  • 1/2 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda


How to:

  1. Preheat oven to 180c, then line a baking tray with baking paper OR grease with coconut oil.
  2. Put dates into a food processor and blitz until sticky.
  3. Add nut butter, tahini, chickpeas, milk, vanilla extract and maple syrup until smooth and sticky.
  4. Add salt, bicarbonate of soda and baking powder and blitz again until combined.
  5. With a spatula, fold chocolate chips through the mixture and spread the batter evenly onto your baking tray. Add a few extra chocolate chips on top as you wish. 😻
  6. Bake for 35 minutes until brown.
  7. Leave to cool on on a metal cooling rack, slicing up and serve!! 💛
