Raspberry & Coconut Boost Balls

So incredibly delicious and even more incredibly easy! ✅

I’ve been wanting to make energy balls for a while now and thought this would be the perfect combination to welcome in the spring sunshine + begin the countdown to summer. (Hoping we’ll be able to get away by then)🥴

The great thing about making sweet treats with natural, whole food ingredients is…

… you’re actually satisfied and charged with real energy after just one serving! 😻

 

These boost balls are soo easy to make and a beautiful combination of tangy + creaminess to satisfy that palette. 👅

Makes: 12 servings

Ingredients:

  • 1 cup rolled oats
  • ½ cup cups almond flour/ground almonds
  • ⅓ cup desiccated coconut
  • 1/4 cup cranberries
  • 1/4 cup chopped dates
  • ½ cup defrosted and crushed frozen raspberries
  • 2 tbsp melted coconut oil

 

How to:

 

  1. Soo simple. Just blend all the ingredients up in a food processor
  2. Mould into little balls and leave to set in fridge for 35 mins!

    TIP: The longer you leave them, indeed the firmer they become. I found that, the next day they tasted even better.) ✌️
