Raspberry & Coconut Boost Balls

I’ve been wanting to make energy balls for a while now and thought this would be the perfect combination to welcome in the spring sunshine + begin the countdown to summer. (Hoping we’ll be able to get away by then)🥴

These boost balls are soo easy to make and a beautiful combination of tangy + creaminess to satisfy that palette. 👅
Makes: 12 servings
Ingredients:
- 1 cup rolled oats
- ½ cup cups almond flour/ground almonds
- ⅓ cup desiccated coconut
- 1/4 cup cranberries
- 1/4 cup chopped dates
- ½ cup defrosted and crushed frozen raspberries
- 2 tbsp melted coconut oil
How to:
- Soo simple. Just blend all the ingredients up in a food processor
- Mould into little balls and leave to set in fridge for 35 mins!
TIP: The longer you leave them, indeed the firmer they become. I found that, the next day they tasted even better.) ✌️
