Revolutionising the Omelette!

I love being inventive when I make food and try as much as I can to make something different each time I cook!

There are so many foods and flavours out there that can be combined and what inspires me more than anything is innovating recipes using ingredients you wouldn’t usually consider merging together. A lot of people might avoid trying new foods because they’re quickly put off by the image of not liking it, and so instead stick to what’s familiar instead.

If you never try, you’ll never know!

 

BE OPEN MINDED.

I’m not the kind of person who measures out all my macro and micro nutrients and follows a very strict diet, but I do try include the essentials in the majority of my meals, PARTICULARLY at breakfast time!

The old classic tale of “breakfast is the most important meal of the day” which you’ve no doubt been told umpteen times by your mum, grandma, doctor, teachers, TV presenters, heck even SpongeBob square pants told us… But it couldn’t be more true!

It sounds obvious but how you begin your day determines how it will pan out, therefore skipping breakfast is the biggest rookie mistake in the book.

Or just as bad, eating simple carbs laden with sugar, such as your average breakfast cereal or pastries. You’ll get an energy boost for a short period of time and then crash hard which only causes you to crave more of the same foods and so the cycle repeats itself!

However, if you eat whole sweet foods, a lot of the time you won’t crave sugar as much later on in the day. For example, sweet potatoes and cinnamon give you the satisfaction of the sweet taste but keep blood glucose levels at bay, thus avoiding spiking your insulin levels!

I’m the sort that prefers sweet to savoury, especially at breakfast, so I think often about how I can include a good amount of protein and fats and still satisfy my sweet tooth.

And then I came up with, the SWEET OMELETTE.

I know what you’re thinking, a sweet omelette? R u off your head? No chance mate, that wouldn’t work. Well plot twist, it DOES.
I created it out of pure laziness when mashing up a banana was too much effort for a simple 2-ingredient egg & banana pancake. I thought I’d experiment by making a regular omelette but mask the eggy taste by throwing in chia seeds and cinnamon whilst cooking.

Then toppings as normal: natural soya yoghurt, more chia seeds, blueberries, the banana I’d been too lazy to include in the first plac, and more chia seeds!

Hand on my heart I promise you wouldn’t even know it’s an omelette. In fact, it could literally be a normal pancake minus the usual processed ingredients that go into it.

RESULT?

Protein: 2 eggs, chia seeds, banana (can also add nuts, peanut butter)
Fats: Yoghurt (nuts/peanut butter)
Carbs: Banana

To switch up for variation I often change up the fruit. For example, in the photo here I used mango 😋

Done and dusted my friends 💪
